When you're a vegetarian, just about any "sides" made in large enough portions can become Main Courses, but I'm going to make an effort to have a separate section for them anyway.
I bake potatoes by piercing their skin several times with a fork, brushing them with olive oil and sea salt, then baking them directly on the oven rack at 400F for 45 minutes. Then I load them up with fixings like soy margarine, soy cheese, tofu sour cream, vegan bacon bits, salt, fresh ground pepper, hot sauce, steamed broccoli, green beans, canned veggie chili, salsa, black beans, avocado, corn, etc.
Mind! I don't mean to say that I know, of my own knowledge, what there is
particularly dead about a door-nail. I might have been inclined, myself,
to regard a coffin-nail as the deadest piece of ironmongery in the trade.
