When you're a vegetarian, just about any "sides" made in large enough portions can become Main Courses, but I'm going to make an effort to have a separate section for them anyway.
I bake potatoes by piercing their skin several times with a fork, brushing them with olive oil and sea salt, then baking them directly on the oven rack at 400F for 45 minutes. Then I load them up with fixings like soy margarine, soy cheese, tofu sour cream, vegan bacon bits, salt, fresh ground pepper, hot sauce, steamed broccoli, green beans, canned veggie chili, salsa, black beans, avocado, corn, etc.
Steady movement is more important than speed, much of the time. So long
as there is a regular progression of stimuli to get your mental hooks
into, there is room for lateral movement. Once this begins, its rate is
a matter of discretion.
