When you're a vegetarian, just about any "sides" made in large enough portions can become Main Courses, but I'm going to make an effort to have a separate section for them anyway.
I bake potatoes by piercing their skin several times with a fork, brushing them with olive oil and sea salt, then baking them directly on the oven rack at 400F for 45 minutes. Then I load them up with fixings like soy margarine, soy cheese, tofu sour cream, vegan bacon bits, salt, fresh ground pepper, hot sauce, steamed broccoli, green beans, canned veggie chili, salsa, black beans, avocado, corn, etc.
Our culture no longer bothers to use words like appropriation or borrowing to
describe those very activities. Today's audience isn't listening at all - it's
participating. Indeed, audience is as antique a term as record, the one
archaically passive, the other archaically physical. The record, not the remix,
is the anomaly today. The remix is the very nature of the digital.
