Preheat oven to 400 degrees. Grease a baking sheet, or line it with foil. Peel and chop beets and carrots into chunks about 3/4". Toss in a large bowl with enough olive oil and salt to coat. Add a little maple syrup and minced ginger for sweetness if desired. Pour out into a single layer on the baking sheet, and bake for 35-40 minutes, turning once halfway through the cooking time.
