Recipes / Sides

Based on The Boston Globe, 2005 April 6

Serves 8.

  • 4 tablespoons olive oil
  • 4 cloves garlic, peeled and sliced
  • 2 pounds fresh spinach, stemmed, rinsed, and dried
  • Coarse sea salt, to taste
  • 1/4 cup pine nuts
  • 1/3 cup golden raisins

In a large skillet, heat the oil over medium heat for 5 seconds. Add the garlic and cook, stirring, for 30 seconds.

Add the spinach and sea salt. Using tongs, keep turning the spinach over to coat it with oil. After 1 minute, add the nuts and raisins. Stir until the spinach wilts. Transfer to a platter to serve.
