Based on a recipe from Moosewood Restaurant Cooks at Home by the Moosewood Collective.
Makes 2 cups.
Using a potato masher or food processor, mix the tofu with the tahini, miso, and 1 teaspoon of the soy sauce until well blended. Stir the scallions and carrots into the tofu mixture. Add black pepper and more soy sauce to taste.
I don't love the flavor of this just on crackers, but it does make a nice sandwich with veggies. Extra firm tofu also worked fine.
Steady movement is more important than speed, much of the time. So long
as there is a regular progression of stimuli to get your mental hooks
into, there is room for lateral movement. Once this begins, its rate is
a matter of discretion.
