Lentil Soup

  • 1 teaspoon vegetable oil
  • 1 medium onion; sliced
  • 1 medium carrot; sliced
  • 4 cup hot vegetable broth
  • 1 cup lentils
  • ¼ teaspoon pepper
  • ¼ teaspoon thyme
  • 2 bay leaves
  • salt to taste
  • 1 tablespoon lemon juice

Heat the oil in a large pot over medium heat, then saute the onion and carrot for about 5 minutess, or until tender. Add the broth, lentils, pepper, thyme, bay leaves and salt. Cover and simmer until lentils are tender, about 40-50 minutes. Stir in the lemon juice and extra salt to taste.
