Heat the oil in a large pot over medium heat, then saute the onion and carrot for about 5 minutes, or until tender. Add the broth, lentils, pepper, thyme, bay leaves and salt. Cover and simmer until lentils are tender, about 40-50 minutes. Stir in the lemon juice and extra salt to taste.
(In a pressure cooker, cook the lentils for 12 minutes.)
