Black Bean and Corn Salad

Serves 2-4.

  • 1/4 cup balsamic vinegar
  • 2 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 3 tbsp chopped fresh cilantro
  • 1+ cup of corn kernals, cooked

1) Mix together balsamic vinegar, oil, salt, sugar, black pepper, cumin, and chili powder.

2) In a separate dish, stir together black beans and corn. Toss with vinegar and oil dressing, and garnish with cilantro. Cover, and refrigerate overnight.
