Combine beets, cabbage and carrots in bowl. Whisk together the rest of the ingredients and dress salad. Cover and chill before serving. Serves 4 to 6.
I could substitute lemon juice for the balsamic vinegar.
If the vinegar is good enough, it probably doesn't need honey.
Dressing it too much ahead of time might be the wrong answer, because it could get soggy.
