Overloading the Machine
Beet, Carrot and Cabbage salad
- 1 pound small beets, peeled and grated
- 1 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/4 cup balsamic vinegar
- 1/8 cup honey
- 1/4 cup vegetable oil
- Salt and pepper to taste
Combine beets, cabbage and carrots in bowl. Whisk together the rest of the ingredients and dress salad. Cover and chill before serving. Serves 4 to 6.
Notes
I could substitute lemon juice for the balsamic vinegar.
If the vinegar is good enough, it probably doesn't need honey.
Dressing it too much ahead of time might be the wrong answer, because it could get soggy.
Other things to try mixing in: toasted nuts or seeds, vegan blue cheese, apple cider vinegar, gomasio, dijon mustard,
